Best Y levels for Overworld ores:

Best way to strip-mine (or my way):
The best way to strip-mine is by digging a long 1x2 tunnel every 2 blocks, making sure there are 2 blocks between each tunnel.

Diamonds are better to mine right above lava level, whilst not the most, still good amount and much safer.
